Greek Rice Salad

Ingredients

  • 1x cup uncooked basmati or brown rice

  • 1 Lebanese cucumber

  • ½ Red onion

  • ¾ cup Kalamata olives

  • ¾ cup Cherry tomatoes

  • Large handful chopped Parsley

  • 100g Feta

  • Juice of 1 x Lemon / or 1 tbsp Vinegar

  • 1 tbsp Olive oil

  • Salt and pepper to taste

Greek Rice Salad

Method

  1. Cook rice as per instructions 

  2. Whilst rice is cooking, chop cucumber, onion, olives, tomatoes and feta into small chunks

  3. Place rice in a large bowl, adding the chopped ingredients.

  4. Sprinkle over parsley, salt and pepper

  5. Drizzle with olive oil and lemon (or vinegar)

  6. Taste test as you might want some more dressing.

  7. Serve with some protein such as chicken, grass fed beef, fish or tofu.
