Apple & Blueberry Crumble Bars

Ingredients

Filling

  • 2x Apples

  • 2x cups Blueberrys

  • 1/2 Lemon squeezed

  • 1/2 cup Maple Syrup

  • 1 tbsp Chia Seeds

Base

  • 1 cup Oats

  • 1 1/2 cup Almond Meal

  • 70g Butter (coconut oil for dairy free)

  • 1 tsp Cinnamon

  • 1 tsp Baking Powder

  • 1/4 cup Rapdura Sugar

Method

  1. Preheat oven to 180 degrees

  2. Chop apples

  3. Add apples, blueberries, maple syrup and lemon in a small saucepan

  4. Once the apples are soft add the chia seeds and continue to cook until it thickens

  5. In a seperate bowl add oats, almond meal, butter, cinnamon, baking powder and rapdura sugar

  6. Add half the crumble into a brownie pan

  7. Place in the oven for 15 minutes

  8. Pour over the blueberry mixture over the base

  9. Spread the remaining crumble over the top

  10. Place in the oven for another 20 minutes until it is browned on the top

  11. Cut into slices and serve with some coconut yoghurt.
