One pot baked veggie rice

Baked Veggie Rice

Ingredients

  • 1x Onion

  • 1x Carrot

  • 1x Zucchini

  • 2x Garlic Cloves

  • Handful Parsley

  • 1 tbsp Bone Broth

  • 2x stock cubes (optional for extra flavour - add with water)

  • 1x cup Rice

  • 2x cups Water

  • Salt and Pepper

Method

  1. Preheat oven to 180 degrees

  2. Chop onion finely

  3. Grate carrot and zucchini

  4. Heat olive oil in an oven proof dish

  5. Add onion and sauté until soft

  6. Add garlic and cook for 1 minute

  7. Add veggies and cook until soft

  8. Add rice, parsley, bone broth, stock, salt + pepper and water

  9. Stir to combine

  10. Place in oven covered for approx 30minutes or until the rice is cooked
