Baked Veggie Rice
Ingredients
1x Onion
1x Carrot
1x Zucchini
2x Garlic Cloves
Handful Parsley
1 tbsp Bone Broth
2x stock cubes (optional for extra flavour - add with water)
1x cup Rice
2x cups Water
Salt and Pepper
Method
Preheat oven to 180 degrees
Chop onion finely
Grate carrot and zucchini
Heat olive oil in an oven proof dish
Add onion and sauté until soft
Add garlic and cook for 1 minute
Add veggies and cook until soft
Add rice, parsley, bone broth, stock, salt + pepper and water
Stir to combine
Place in oven covered for approx 30minutes or until the rice is cooked
