Banana Hemp Muffins

Ingredients

  • 3x Ripe Bananas

  • 2x Eggs

  • 1/2 cup Honey or Maple Syrup

  • 1/3 cup Olive Oil

  • 1/3 cup Almond Milk

  • 1 cup Buckwheat flour

  • 1 cup Almond Meal

  • 1/2 cup Hemp Seeds + More to sprinkle on top

  • 1 tsp Baking Powder

  • 1 tsp Cinnamon

Method

  1. Preheat the oven to 180 degrees

  2. Mash bananas in a bowl

  3. Add eggs, honey, olive oil, almond milk and mix to combine

  4. In a separate bowl add buckwheat, almond meal, hemp seeds, baking powder and cinnamon and mix together well

  5. Pour wet ingredients into the dry and mix until it is combined

  6. Grease a muffin tray (either 6 large or 12 small)

  7. Add mixture evenly to the tin

  8. Bake for around 20 minutes until a skewer comes out clean
