Banana Hemp Muffins
Ingredients
3x Ripe Bananas
2x Eggs
1/2 cup Honey or Maple Syrup
1/3 cup Olive Oil
1/3 cup Almond Milk
1 cup Buckwheat flour
1 cup Almond Meal
1/2 cup Hemp Seeds + More to sprinkle on top
1 tsp Baking Powder
1 tsp Cinnamon
Method
Preheat the oven to 180 degrees
Mash bananas in a bowl
Add eggs, honey, olive oil, almond milk and mix to combine
In a separate bowl add buckwheat, almond meal, hemp seeds, baking powder and cinnamon and mix together well
Pour wet ingredients into the dry and mix until it is combined
Grease a muffin tray (either 6 large or 12 small)
Add mixture evenly to the tin
Bake for around 20 minutes until a skewer comes out clean
