Blueberry Coconut Loaf

Ingredients

  • 3x Bananas

  • 1 cup Almond Meal

  • 1/2 cup Coconut Flour

  • 1/4 cup Desiccated Coconut

  • 1/4 cup Honey

  • 1 cup Blueberries

  • 3x Eggs

  • 1 tsp Cinnamon

  • 1 tsp Baking Powder

  • 1/2 tsp Vanilla Essence

Method

  1. Preheat oven to 180 degrees.

  2. Mash bananas in a bowl.

  3. Add honey, eggs and vanilla essence and mix until combine.

  4. In a seperate bowl combine almond meal, coconut flour, desiccated coconut, cinnamon and baking powder and mix together.

  5. Pour wet ingredients into the dry and mix to combine.

  6. Carefully stir through blueberries.

  7. Poor into a lined loaf tin

  8. Bake for 40-50minutes until golden and a skewer comes out clean.
