Brussles Sprout Salad

Brussels Sprout & Butter Bean Salad

Ingredients

  • 10x Brussel Sprouts

  • 2x cans Butter Beans

  • 2x Spring Onions

  • Handful Parsley

  • 2x Garlic cloves

  • 1x Lemon

  • 2 tbsp Olive Oil

  • Salt and Pepper

Method

  1. Preheat the oven to 180 degrees

  2. Chop brussels in half and place on a baking tray, drizzle with olive oil, salt and pepper

  3. Place in the oven for 30 minutes or until crispy

  4. Whilst they are cooking, chop spring onion and parsley and crush the garlic

  5. Juice the lemon 

  6. Drain and rinse the butter beans and place in a large bowl

  7. Add garlic, onion, parsley, lemon juice, olive oil, salt and pepper

  8. Mix to combine

  9. Top with crispy brussels and add some more parsley.
