Chia Jam Drops

Ingredients

  • 1 cup Almond Meal

  • 1 cup Spelt Flour

  • 100g Butter

  • 1/2 cup Honey

  • 1 tsp Vanilla Extract

  • Pinch Cinnamon

Chia Jam

  • 1 cup frozen Raspberries

  • 1 tbsp Chia Seeds

  • 1 tsp Honey

  • Squeeze of Lemon

Method

  1. Preheat oven to 180 degrees

  2. Mix together almond meal, spelt, melted butter, honey, vanilla extract and cinnamon

  3. Combine well

  4. Now to make the jam!

  5. Add frozen berries, honey and lemon into a small saucepan. Gentle simmer until the berries soften

  6. Add the chia seeds, mix through and continue to cook until it becomes thick.

  7. Place to the side and let cool

  8. Line a tray with baking paper

  9. Roll into small balls and place on the tray

  10. Use your thumb to make a small indent

  11. Spoon the jam in

  12. Place in the oven for 20-30 minutes until golden brown.
