Choc Banana Bread
Ingredients
3x ripe bananas
2x eggs
2 tbsp olive oil
1/2 cup almond milk
1/4 cup honey
1 cup gluten free flour
1 cup buckwheat flour
1/2 cup coconut sugar
1 tsp baking powder
1/2 tsp baking soda
100g 70% dark chocolate
Method
Preheat oven to 170 degrees
Line a loaf tin with baking paper
Mash bananas in a bowl
Add olive oil, almond milk, eggs and honey. Mix to combine
In another bowl add flour, sugar, baking powder and baking soda.
Poor wet mixture into dry and mix well
Chop chocolate roughly and add 3/4 to the mixture
Poor the mixture into a baking tin and top with the remaining chocolate
Bake for 45-60 minute depending on your oven (check it's done by checking a skewer comes out clean)
