Chocolate Banana Bread

Choc Banana Bread

Ingredients

  • 3x ripe bananas

  • 2x eggs

  • 2 tbsp olive oil

  • 1/2 cup almond milk

  • 1/4 cup honey

  • 1 cup gluten free flour

  • 1 cup buckwheat flour

  • 1/2 cup coconut sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 100g 70% dark chocolate

Method

  1. Preheat oven to 170 degrees

  2. Line a loaf tin with baking paper

  3. Mash bananas in a bowl

  4. Add olive oil, almond milk, eggs and honey. Mix to combine

  5. In another bowl add flour, sugar, baking powder and baking soda.

  6. Poor wet mixture into dry and mix well

  7. Chop chocolate roughly and add 3/4 to the mixture

  8. Poor the mixture into a baking tin and top with the remaining chocolate

  9. Bake for 45-60 minute depending on your oven (check it's done by checking a skewer comes out clean)
