Choc Pistachio Cookies
Method
Preheat the oven to 160 degrees.
Add buckwheat flour, almond meal, cinnamon and baking powder to a bowl and mix to combine.
In a separate bowl mix together coconut oil and honey, then add to the flour mixture.
Add an egg and mix to combine.
Chop pistachios and chocolate.
Add half the pistachios to the mixture.
Spoon the mixture onto the tray making around 12 cookies.
Sprinkle over chocolate and pistachios and lightly press into the cookie dough.
Bake for 15 minutes or until slightly browned.
Ingredients
1 cup Buckwheat flour
1/2 cup Almond meal
1/2 tsp Cinnamon
1 tsp Baking powder
2 tbsp Coconut Oil
1/2 cup Honey
1 Egg
1/4 cup Pistachios
80g 70% Dark Chocolate
