Egg Breaky Muffins

Method

  1. Preheat oven to 180 degrees

  2. Slice onion and add to a pan with some ghee or olive oil and cook on low until caramelised

  3. Whilst this is cooking, grate pumpkin and chop greens thinly. Add to the onions and cook until wilted

  4. In a large bowl whisk eggs ands goats cheese together

  5. Add flour, baking powder, salt and pepper

  6. Mix until combined

  7. Add the veggies and stir through

  8. Pour into a greased muffin tin

  9. Baked for 25-35 minutes

Ingredients

  • 3x Onions

  • 8x Eggs

  • 1 cup Pumpkin Grated

  • 2 cups Silverbeet or Spinach

  • 1 cup Flour (Rye, spelt, buckwheat)

  • 1/2 cup Goats cheese

  • 1 tsp Baking Powder

  • Salt and pepper
