Lentil Salad
Ingredients
Large handful of green beans
1/2 Radicchio (or Rocket)
1x can Lentils
100g Feta
1x Lemon
Handful Parsley
2 tbsp Olive Oil
Salt + Pepper
Method
Steam green beans for around 5-7 minutes until you can pierce with fork.
Drain and rinse lentils and place in a large bowl.
Chop radicchio and parsley, adding to the lentils.
Add beans.
Crumble in fetta.
Juice lemon into a small bowl, add olive oil and salt + pepper.
Drizzle over the salad + mix.
