Slow Cooker Mexican Chicken
Ingredients
1kg Chicken Breast
1x can Crushed Tomatoes
3/4 cup Chicken broth/stock
1x can Blacks beans
1x can Corn
2 tbsp Tomato paste
1x Onion
2 tsp Cumin
2 tsp Garlic powder
1 tbsp Paprika
1 tsp Cayenne pepper (optional for spice)
Salt and pepper to taste
Method
Chop onion finely
Add all ingredients to the slow cooker
Mix to combine
Cook on low for 6-7hours
Shred chicken with two forks
I love to put it in tacos with fresh tomato salsa and some guacamole
