Miso Soba Noodle Salad

Ingredients

  • 270g Soba Noodles - Packet (Buckwheat for GF)

  • 1 cup Edamame beans

  • 1 bunch Broccolini

  • 4 Radishes

  • 1/2 Avocado

  • 1 tbsp Sesame Seeds

  • 4 Spring Onions

Sauce

  • 2 tbsp Miso (white)

  • 1 tbsp Apple Cider Vinegar

  • 2 tbsp Soy (tamari GF)

  • 1 tsp Sesame Oil

  • 2 Garlic Cloves

  • 1 tsp Honey

Method

  1. Heat a pot of water.

  2. Cook soba noodles according to packet instructions.

  3. In a smaller pot, boil edamame according to packet instructions and set aside.

  4. Mix sauce ingredients together and set aside.

  5. Chop broccolini and steam (alternatively, pan-fry with some olive oil).

  6. Chop up radishes, spring onion, and avocado.

  7. Place noodles into a large bowl and pour over the sauce.

  8. Add radishes, broccolini, and edamame and mix through.

  9. Top with avocado, spring onions, and sesame seeds.

  10. Serve with some extra protein! I like to add some salmon, chicken, or tofu!
