Miso Soba Noodle Salad
Ingredients
270g Soba Noodles - Packet (Buckwheat for GF)
1 cup Edamame beans
1 bunch Broccolini
4 Radishes
1/2 Avocado
1 tbsp Sesame Seeds
4 Spring Onions
Sauce
2 tbsp Miso (white)
1 tbsp Apple Cider Vinegar
2 tbsp Soy (tamari GF)
1 tsp Sesame Oil
2 Garlic Cloves
1 tsp Honey
Method
Heat a pot of water.
Cook soba noodles according to packet instructions.
In a smaller pot, boil edamame according to packet instructions and set aside.
Mix sauce ingredients together and set aside.
Chop broccolini and steam (alternatively, pan-fry with some olive oil).
Chop up radishes, spring onion, and avocado.
Place noodles into a large bowl and pour over the sauce.
Add radishes, broccolini, and edamame and mix through.
Top with avocado, spring onions, and sesame seeds.
Serve with some extra protein! I like to add some salmon, chicken, or tofu!
