Orange and poppy seed cake

Mandarin & Poppy Seed Cake

Ingredients

  • 2x Large Mandarins (Or Orange)

  • 3x cups Almond meal

  • 2 Tbsp Poppy seeds

  • 4x Eggs

  • 1 Tbsp Olive Oil

  • 1/2 cup Maple Syrup

  • 1 tsp Baking Powder

Method

  1. Preheat oven to 170 degrees

  2. Place mandarins in a pot of boiling water for 20 minutes. Then set aside to cool.

  3. Place almond meal, poppy seeds and baking powder in a bowl and mix.

  4. In a seperate bowl combine eggs, maple syrup and olive oil

  5. Once oranges are cool blend to a paste in a blender then mix into to the wet mixture.

  6. Poor wet mixture in the fry and mix to combine.

  7. Line a cake tin with baking paper at the bottom then poor in cake mixture evenly.

  8. Bake for 30-40 minutes until a skewer comes out clean.
