Mandarin & Poppy Seed Cake
Ingredients
2x Large Mandarins (Or Orange)
3x cups Almond meal
2 Tbsp Poppy seeds
4x Eggs
1 Tbsp Olive Oil
1/2 cup Maple Syrup
1 tsp Baking Powder
Method
Preheat oven to 170 degrees
Place mandarins in a pot of boiling water for 20 minutes. Then set aside to cool.
Place almond meal, poppy seeds and baking powder in a bowl and mix.
In a seperate bowl combine eggs, maple syrup and olive oil
Once oranges are cool blend to a paste in a blender then mix into to the wet mixture.
Poor wet mixture in the fry and mix to combine.
Line a cake tin with baking paper at the bottom then poor in cake mixture evenly.
Bake for 30-40 minutes until a skewer comes out clean.
