Ingredients
4x large potato’s
2x Spring Onion
Handful of Parsley
1 tbsp Extra virgin olive oil
2-3 tbsp Vinegar
Salt and Pepper
Potato Salad
Method
Chop potato’s into small cubes
Boil until very soft (20minutes)
Drain and add to a large bowl
Add chopped spring onion, parsley, vinegar, olive oil and salt and pepper
Mix together
Place in fridge until cold
