Ingredients

Base

  • 1 x bunch of Parsley

  • 1 x Cucumber

  • 1 cup Cherry Tomatoes

  • 1/2 cup Olive Oil

  • Juice of 1–2 Lemons

  • 1/2 cup Cous Cous (Quinoa for GF)

  • Salt and Pepper

Method

  1. Chop cucumber and tomatoes into small pieces

  2. Finely chop the parsley

  3. Cook cous cous or quinoa to package instructions

  4. Add cucumber, parsley, tomatoes and cous cous to a large bowl and mix until combined

  5. Combine olive oil, lemon juice, salt and pepper

  6. Drizzle over the dressing and mix to combine
