Whipped Feta + Brussels Sprout Salad
Ingredients
10-12 Brussels sprouts
200g Feta
3/4 cup Greek Yoghurt
1/2 Lemon Zest
1/2 Pomegranate seeds
1 tbsp Pistachios Chopped
Olive oil
Salt + Pepper
Method
Preheat oven to 180 degrees
Chop Brussels in half
Place in a baking tray, drizzle with olive oil, salt and pepper
Bake for 20-30 minutes until golden and crispy (some ovens may take longer
Whilst that’s cooking combine, feta, yoghurt and lemon in a blender
To plate spoon feta on a plate
Top with Brussels, pomegranate, pistachios, olive oil, salt and pepper
