Whipped Feta + Brussels Sprout Salad

Ingredients

  • 10-12 Brussels sprouts

  • 200g Feta

  • 3/4 cup Greek Yoghurt

  • 1/2 Lemon Zest

  • 1/2 Pomegranate seeds

  • 1 tbsp Pistachios Chopped

  • Olive oil

  • Salt + Pepper

Method

  1. Preheat oven to 180 degrees

  2. Chop Brussels in half

  3. Place in a baking tray, drizzle with olive oil, salt and pepper

  4. Bake for 20-30 minutes until golden and crispy (some ovens may take longer

  5. Whilst that’s cooking combine, feta, yoghurt and lemon in a blender

  6. To plate spoon feta on a plate

  7. Top with Brussels, pomegranate, pistachios, olive oil, salt and pepper
