
Baked Veggie Rice

Ingredients
- 1x Onion
- 1x Carrot
- 1x Zucchini
- 2x Garlic Cloves
- Handful Parsley
- 1 tbsp Bone Broth
- 2x stock cubes (optional for extra flavour - add with water)
- 1x cup Rice
- 2x cups Water
- Salt and Pepper
Method
- Preheat oven to 180 degrees
- Chop onion finely
- Grate carrot and zucchini
- Heat olive oil in an oven proof dish
- Add onion and sauté until soft
- Add garlic and cook for 1 minute
- Add veggies and cook until soft
- Add rice, parsley, bone broth, stock, salt + pepper and water
- Stir to combine
- Place in oven covered for approx 30minutes or until the rice is cooked
