
Banana Hemp Muffins

Ingredients
- 3x Ripe Bananas
- 2x Eggs
- 1/2 cup Honey or Maple Syrup
- 1/3 cup Olive Oil
- 1/3 cup Almond Milk
- 1 cup Buckwheat flour
- 1 cup Almond Meal
- 1/2 cup Hemp Seeds + More to sprinkle on top
- 1 tsp Baking Powder
- 1 tsp Cinnamon
Method
- Preheat the oven to 180 degrees
- Mash bananas in a bowl
- Add eggs, honey, olive oil, almond milk and mix to combine
- In a separate bowl add buckwheat, almond meal, hemp seeds, baking powder and cinnamon and mix together well
- Pour wet ingredients into the dry and mix until it is combined
- Grease a muffin tray (either 6 large or 12 small)
- Add mixture evenly to the tin
- Bake for around 20 minutes until a skewer comes out clean
