
Blueberry Coconut Loaf

Ingredients
- 3x Bananas
- 1 cup Almond Meal
- 1/2 cup Coconut Flour
- 1/4 cup Desiccated Coconut
- 1/4 cup Honey
- 1 cup Blueberries
- 3x Eggs
- 1 tsp Cinnamon
- 1 tsp Baking Powder
- 1/2 tsp Vanilla Essence
Method
- Preheat oven to 180 degrees.
- Mash bananas in a bowl.
- Add honey, eggs and vanilla essence and mix until combine.
- In a seperate bowl combine almond meal, coconut flour, desiccated coconut, cinnamon and baking powder and mix together.
- Pour wet ingredients into the dry and mix to combine.
- Carefully stir through blueberries.
- Poor into a lined loaf tin
- Bake for 40-50minutes until golden and a skewer comes out clean.
