Brussels Sprout & Butter Bean Salad

Ingredients
- 10x Brussel Sprouts
- 2x cans Butter Beans
- 2x Spring Onions
- Handful Parsley
- 2x Garlic cloves
- 1x Lemon
- 2 tbsp Olive Oil
- Salt and Pepper
Method
- Preheat the oven to 180 degrees
- Chop brussels in half and place on a baking tray, drizzle with olive oil, salt and pepper
- Place in the oven for 30 minutes or until crispy
- Whilst they are cooking, chop spring onion and parsley and crush the garlic
- Juice the lemon
- Drain and rinse the butter beans and place in a large bowl
- Add garlic, onion, parsley, lemon juice, olive oil, salt and pepper
- Mix to combine
- Top with crispy brussels and add some more parsley.
