
Greek Rice Salad

Ingredients
- 1x cup uncooked basmati or brown rice
- 1 Lebanese cucumber
- ½ Red onion
- ¾ cup Kalamata olives
- ¾ cup Cherry tomatoes
- Large handful chopped Parsley
- 100g Feta
- Juice of 1 x Lemon / or 1 tbsp Vinegar
- 1 tbsp Olive oil
- Salt and pepper to taste
Method
- Cook rice as per instructions
- Whilst rice is cooking, chop cucumber, onion, olives, tomatoes and feta into small chunks
- Place rice in a large bowl, adding the chopped ingredients.
- Sprinkle over parsley, salt and pepper
- Drizzle with olive oil and lemon (or vinegar)
- Taste test as you might want some more dressing.
- Serve with some protein such as chicken, grass fed beef, fish or tofu.
