
Lentil Salad

Ingredients
- Large handful of green beans
- 1/2 Radicchio (or Rocket)
- 1x can Lentils
- 100g Feta
- 1x Lemon
- Handful Parsley
- 2 tbsp Olive Oil
- Salt + Pepper
Method
- Steam green beans for around 5-7 minutes until you can pierce with fork.
- Drain and rinse lentils and place in a large bowl.
- Chop radicchio and parsley, adding to the lentils.
- Add beans.
- Crumble in fetta.
- Juice lemon into a small bowl, add olive oil and salt + pepper.
- Drizzle over the salad + mix.
