Miso Soba Noodle Salad

Ingredients
- 270g Soba Noodles - Packet (Buckwheat for GF)
- 1 cup Edamame beans
- 1 bunch Broccolini
- 4 Radishes
- 1/2 Avocado
- 1 tbsp Sesame Seeds
- 4 Spring Onions
Sauce
- 2 tbsp Miso (white)
- 1 tbsp Apple Cider Vinegar
- 2 tbsp Soy (tamari GF)
- 1 tsp Sesame Oil
- 2 Garlic Cloves
- 1 tsp Honey
Method
- Heat a pot of water.
- Cook soba noodles according to packet instructions.
- In a smaller pot, boil edamame according to packet instructions and set aside.
- Mix sauce ingredients together and set aside.
- Chop broccolini and steam (alternatively, pan-fry with some olive oil).
- Chop up radishes, spring onion, and avocado.
- Place noodles into a large bowl and pour over the sauce.
- Add radishes, broccolini, and edamame and mix through.
- Top with avocado, spring onions, and sesame seeds.
- Serve with some extra protein! I like to add some salmon, chicken, or tofu!
