traditional greek potato salad with parsley and spring onion

Potato Salad

 

Ingredients

  • 4x large potato’s
  • 2x Spring Onion
  • Handful of Parsley
  • 1 tbsp Extra virgin olive oil
  • 2-3 tbsp Vinegar
  • Salt and Pepper


Method

  1. Chop potato’s into small cubes
  2. Boil until very soft (20minutes)
  3. Drain and add to a large bowl
  4. Add chopped spring onion, parsley, vinegar, olive oil and salt and pepper
  5. Mix together
  6. Place in fridge until cold
