Slow Cooker Mexican Chicken

Ingredients

  • 1kg Chicken Breast
  • 1x can Crushed Tomatoes
  • 3/4 cup Chicken broth/stock
  • 1x can Blacks beans
  • 1x can Corn
  • 2 tbsp Tomato paste
  • 1x Onion
  • 2 tsp Cumin
  • 2 tsp Garlic powder
  • 1 tbsp Paprika
  • 1 tsp Cayenne pepper (optional for spice)
  • Salt and pepper to taste

 

Method

  1. Chop onion finely
  2. Add all ingredients to the slow cooker
  3. Mix to combine
  4. Cook on low for 6-7hours
  5. Shred chicken with two forks
  6. I love to put it in tacos with fresh tomato salsa and some guacamole
