
Slow Cooker Mexican Chicken

Ingredients
- 1kg Chicken Breast
- 1x can Crushed Tomatoes
- 3/4 cup Chicken broth/stock
- 1x can Blacks beans
- 1x can Corn
- 2 tbsp Tomato paste
- 1x Onion
- 2 tsp Cumin
- 2 tsp Garlic powder
- 1 tbsp Paprika
- 1 tsp Cayenne pepper (optional for spice)
- Salt and pepper to taste
Method
- Chop onion finely
- Add all ingredients to the slow cooker
- Mix to combine
- Cook on low for 6-7hours
- Shred chicken with two forks
- I love to put it in tacos with fresh tomato salsa and some guacamole
