Ingredients
Base
- 1 x bunch of Parsley
- 1 x Cucumber
- 1 cup Cherry Tomatoes
- 1/2 cup Olive Oil
- Juice of 1–2 Lemons
- 1/2 cup Cous Cous (Quinoa for GF)
- Salt and Pepper
Method
- Chop cucumber and tomatoes into small pieces
- Finely chop the parsley
- Cook cous cous or quinoa to package instructions
- Add cucumber, parsley, tomatoes and cous cous to a large bowl and mix until combined
- Combine olive oil, lemon juice, salt and pepper
- Drizzle over the dressing and mix to combine
