Chia Jam Drops

Ingredients
- 1 cup Almond Meal
- 1 cup Spelt Flour
- 100g Butter
- 1/2 cup Honey
- 1 tsp Vanilla Extract
- Pinch Cinnamon
Chia Jam
- 1 cup frozen Raspberries
- 1 tbsp Chia Seeds
- 1 tsp Honey
- Squeeze of Lemon
Method
- Preheat oven to 180 degrees
- Mix together almond meal, spelt, melted butter, honey, vanilla extract and cinnamon
- Combine well
- Now to make the jam!
- Add frozen berries, honey and lemon into a small saucepan. Gentle simmer until the berries soften
- Add the chia seeds, mix through and continue to cook until it becomes thick.
- Place to the side and let cool
- Line a tray with baking paper
- Roll into small balls and place on the tray
- Use your thumb to make a small indent
- Spoon the jam in
- Place in the oven for 20-30 minutes until golden brown.
