
Choc Banana Bread

Ingredients
- 3x ripe bananas
- 2x eggs
- 2 tbsp olive oil
- 1/2 cup almond milk
- 1/4 cup honey
- 1 cup gluten free flour
- 1 cup buckwheat flour
- 1/2 cup coconut sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 100g 70% dark chocolate
Method
- Preheat oven to 170 degrees
- Line a loaf tin with baking paper
- Mash bananas in a bowl
- Add olive oil, almond milk, eggs and honey. Mix to combine
- In another bowl add flour, sugar, baking powder and baking soda.
- Poor wet mixture into dry and mix well
- Chop chocolate roughly and add 3/4 to the mixture
- Poor the mixture into a baking tin and top with the remaining chocolate
- Bake for 45-60 minute depending on your oven (check it's done by checking a skewer comes out clean)
