
Choc Pistachio Cookies

Ingredients
- 1 cup Buckwheat flour
- 1/2 cup Almond meal
- 1/2 tsp Cinnamon
- 1 tsp Baking powder
- 2 tbsp Coconut Oil
- 1/2 cup Honey
- 1 Egg
- 1/4 cup Pistachios
- 80g 70% Dark Chocolate
Method
- Preheat the oven to 160 degrees.
- Add buckwheat flour, almond meal, cinnamon and baking powder to a bowl and mix to combine.
- In a separate bowl mix together coconut oil and honey, then add to the flour mixture.
- Add an egg and mix to combine.
- Chop pistachios and chocolate.
- Add half the pistachios to the mixture.
- Spoon the mixture onto the tray making around 12 cookies.
- Sprinkle over chocolate and pistachios and lightly press into the cookie dough.
- Bake for 15 minutes or until slightly browned.
