
Mandarin & Poppy Seed Cake

Ingredients
- 2x Large Mandarins (Or Orange)
- 3x cups Almond meal
- 2 Tbsp Poppy seeds
- 4x Eggs
- 1 Tbsp Olive Oil
- 1/2 cup Maple Syrup
- 1 tsp Baking Powder
Method
- Preheat oven to 170 degrees
- Place mandarins in a pot of boiling water for 20 minutes. Then set aside to cool.
- Place almond meal, poppy seeds and baking powder in a bowl and mix.
- In a seperate bowl combine eggs, maple syrup and olive oil
- Once oranges are cool blend to a paste in a blender then mix into to the wet mixture.
- Poor wet mixture in the fry and mix to combine.
- Line a cake tin with baking paper at the bottom then poor in cake mixture evenly.
- Bake for 30-40 minutes until a skewer comes out clean.
